What Is Fast Casual Sushi? Here's the Honest Answer

We get this question at the counter probably three times a week. Someone walks into the Dojo, looks at the menu board, looks at the line, looks at the ninja on the wall, and goes: "wait… so how does this work?"

Fair. Let's talk about it.

So What Is Fast Casual Sushi, Exactly?

Short version: it's sushi built the way you'd build a burrito. You walk down a line, you pick your base, your protein, your toppings, your sauces, and you walk out with it in about five minutes. No reservation. No omakase. No $18 for six pieces of tuna.

The whole idea behind fast casual sushi is that you shouldn't have to make sushi a whole event. Sometimes you just want good fish and rice on a Tuesday at 11pm because you've been studying since noon. (Which, by the way, is why we're open until 2AM at select Dojos. We know exactly who's coming in at 1:40.)

Traditional Sushi Bar vs. Fast Casual — The Real Differences

  • Speed: Sit-down sushi is 45 minutes minimum. We're a few minutes, start to finish.
  • Control: At a sushi bar you order off a fixed menu. Here, you decide. Want spicy krab, avocado, kimchi, crunch, and three sauces on one bowl? Nobody's stopping you.
  • Price: Fast casual is built to be an everyday thing, not a special-occasion thing.
  • The format: Bowls. Burritos. Chilled noodle bowls. Poke. Rolls if you want the classic. Way more than just nigiri.

Here's the thing that surprised even us — when we opened the UCF Dojo back in 2011, we assumed rolls would be the star. Nope. Bowls and burritos took over immediately and never gave the crown back.

How to Order Your First Time (Without Freezing Up)

1. Pick a format first

Bowl if you want to eat it with a fork. Burrito if you want it one-handed. Chilled noodle bowl if it's 94 degrees outside and you can't do warm rice today.

2. Don't build from scratch on day one

Honestly? Order a signature. The Party in My Mouth Bowl is criminally underrated and I will keep saying it. The Boom Boom Shrimp Bowl is the safest crowd-pleaser we have. And if you haven't touched the Steak Mac & Cheese Crunch Burrito yet — mac and cheese, inside a sushi burrito — what are you even doing with your life?

3. Then go build-your-own next visit

Once you know what sauces you like, Create Your Own is where the fun actually lives. Flame-torched proteins, house sauces, crunch on top. Go wild.

Who This Is For

Vegans — we got you (Hi-Ya! Waska Bowl, Livin' on the Veg, Edamame Dumplings). People who don't do raw fish — cooked proteins everywhere, no judgment. Kids — the Fun Box exists. Spice chasers — look for the 🌶 and prepare accordingly.
