How to Build a Sushi Bowl for Meal Prep That Actually Holds Up

We get this question at the Dojo more than you'd think. Usually from a UCF student around 11pm, usually while they're ordering their third bowl of the week: "Can I just get like, four of these and eat them all week?"

Short answer — yes. Longer answer — yes, but only if you build it right. Because a sushi bowl for meal prep is a totally different animal than a bowl you're eating in the car on the way home.

The Golden Rule: Cooked Proteins Win

I'll say it plainly. If you're prepping ahead, go cooked. Flame-torched chicken, steak, shrimp, tofu, krab — these all reheat or eat-cold like champs. Raw salmon and tuna are incredible, but they're a today food. Same day, no debate.

So as much as I love the Crazy Rich Salmon Bowl, that's not your Tuesday-through-Friday guy. That's your "I'm eating this right now in the parking lot" guy. For prep, I'd point you toward something like the Kickin' Chicken build or a steak-based bowl.

Grains matter more than you think

Sushi rice is great, but it firms up in the fridge. Not ruined — just firmer. A few seconds in the microwave with a damp paper towel over the top brings it right back. If you want something that genuinely tastes better cold, go with the chilled noodles instead. A Teriyaki Steak Chilled Noodle Bowl on day two is honestly kind of elite.

Sauce On The Side. Always.

This is the one tip people ignore and then complain about soggy bowls. Our house sauces are the whole personality of the bowl — but they're also liquid, and liquid plus rice plus 48 hours equals mush.

Ask for your sauces on the side. Add them right before you eat. Takes four seconds and your bowl stays texturally intact.

Same logic for anything crunchy — crispy onions, tempura flakes, wontons. Keep them separate or accept that they'll go soft. (Some people like them soft. No judgment. I'm not one of them.)

What We'd Actually Order for a Week of Lunches

  • Base: Half rice, half spring mix. The greens keep it from feeling heavy by Thursday.
  • Protein: Cooked. Chicken, steak, shrimp, or tofu.
  • Veggies: Cucumber, carrots, edamame, kimchi. Sturdy stuff that doesn't wilt.
  • Skip: Avocado. It browns. Add fresh at home if you need it.
  • Sauce: On the side. Non-negotiable.

And if you want zero effort, the Hi-Ya! Waska Bowl is vegan, loaded, and holds up great. The Party in My Mouth Bowl is underrated for this too — it's got enough going on that it doesn't get boring.

Why Order Instead of Making It Yourself

Look, you can make a sushi bowl for meal prep at home. But between the rice, the sauces, the prep, the cleanup? We've been building these since 2011 across all seven Dojos. Order a few, portion them out, done.

Build yours at order.incentivio.com/c/sushieatstation — and grab the rewards app while you're at it, because if you're prepping weekly you're leaving points on the table. Open till 2am at select Dojos, by the way. Late-night prep runs are a real thing.
