Sushi in Altamonte Springs? Our Dojo's Been Here Since 2016

We opened the Altamonte Springs Dojo back in June 2016, and honestly? It still feels like one of our favorite rooms to be in. Busy lunch rushes, people from the offices nearby, families coming in after a mall run, college kids who drove up from Orlando because they heard about the burritos.

If you've been hunting for sushi Altamonte Springs locals actually keep going back to, we'd like a word.

It's Not a Sushi Bar. It's a Dojo.

Here's the part that throws people off the first time. You don't sit down and wait 25 minutes for a chef you can't see. You walk the line. You pick your base, your protein, your sauces, your crunch — and a Ninja builds it right in front of you.

We flame-torch proteins on the line. We make our sauces in house. It takes a few minutes, not half an hour. That's the whole idea Robert and Teresa had back in 2008 when they realized fast-casual build-your-own sushi just... didn't exist anywhere.

What to order if it's your first time

  • Create Your Own Sushi Bowl — the #1 thing we sell, and for good reason. Small, regular, or large.
  • Steak Mac & Cheese Crunch Burrito — mac and cheese. In a sushi burrito. I know. Just order it once.
  • Party in My Mouth Bowl — genuinely underrated. People sleep on it and I don't understand why.
  • Boom Boom Shrimp Bowl — if you like spicy and crispy in the same bite.
  • Krab Rangoons — don't pretend you weren't going to add them anyway.

And if you don't eat fish at all, the Hi-Ya! Waska Bowl is fully vegan, as are the Edamame Dumplings, Spring Rolls and Seaweed Salad. We've had whole groups come in where half the table eats raw salmon and the other half eats plants. Everybody leaves happy.

Why the Altamonte Spot Hits Different

Altamonte is kind of the sweet spot for us. It's close enough to downtown Orlando that people swing by, but it's also its own little world — Altamonte Mall, Cranes Roost, all the office parks and apartments around 436. You've got a thousand places to eat and most of them are the same six chains you already know.

We're the one that lets you build a poke bowl, a chilled noodle bowl, a hand roll, or a Flamin'-hot-level sushi burrito depending on your mood that day. Same counter. Same visit.

This was our second Dojo ever, after the original UCF location. So the Altamonte Springs crew has been doing this a long time — they know the regulars, they know who wants extra eel sauce without asking, they know who's getting the Cheet Day Burrito every single Friday.

A couple of pro moves

Order ahead online and skip the line entirely — a huge chunk of our orders come in digital now. And download the rewards app (iOS and Android) before you order, not after, because nobody likes realizing they left points on the table.

Also: don't be shy with the sauce combos. Truffle Rice Tots on the side. Thank us later.

Come see us in Altamonte Springs. Bring someone who thinks they don't like sushi — we've converted a lot of those. Order online or just walk in and let a Ninja build you something.
