We get this question at the counter constantly. Someone's standing there, staring at the line, and they go: "okay but how many calories is this thing?"

Fair question. And the honest answer is — it depends entirely on what you build. That's kind of the whole point of a build-your-own bowl. Two people can order at the UCF Dojo back to back and walk out with wildly different bowls.

So let's break down where sushi bowl calories actually come from, and how to steer your build without turning your lunch into a science project.

The Base Is Doing More Than You Think

Rice is usually the biggest single chunk of the calorie count. Not because rice is evil (it isn't), but because portion size scales fast. A Small bowl versus a Large bowl is a real difference — sometimes a few hundred calories just in the base.

If you're watching the number, here's the easy move: go half rice, half greens. Or skip rice entirely and load up on the veggie side. You still get a full bowl. You just cut a big line item.

And if you're going the other direction — bulking, post-gym, whatever — a Large with rice is one of the more efficient ways to eat real food fast.

Protein: Pick Your Fighter

Raw fish is the lean option, plain and simple. Salmon, tuna — high protein, minimal added anything. Our flame-torched proteins land a little higher because of the sauce and the sear, but they're also the reason people get obsessed with the Crazy Rich Salmon Bowl.

  • Middle ground: teriyaki chicken, steak, krab

The high-protein one: Regular bowl, double protein (chicken and tuna), light rice, veggies stacked, sauce on the side.
