How to Nail a Salmon Poke Bowl Recipe (Ninja-Approved)

We get asked this a lot. Someone comes into the UCF Dojo, orders the Crazy Rich Salmon Bowl, and then two days later DMs us like "okay but how do I make this at home?"

Fair question. So let's talk about it.

The Rice Is 80% of It (Sorry)

Everybody wants to talk about the fish. But a bad salmon poke bowl recipe usually falls apart at the rice stage, not the fish stage.

Cook your short-grain sushi rice, then while it's still hot, fold in seasoned rice vinegar — about 3 tablespoons of vinegar, 1.5 tablespoons sugar, and a big pinch of salt per two cups of uncooked rice. Fold, don't stir. You're not making mashed potatoes.

Let it cool to just-above-room-temp. Cold rice with cold fish is sad. Warm rice with cold fish? That's the whole magic.

Getting the Salmon Right

Buy sushi-grade or previously-frozen-at-sea salmon. Ask the fish counter directly — if they hesitate, walk. Then cut it into half-inch cubes with a sharp knife in one clean pull. Sawing at raw salmon wrecks the texture.

Our marinade at home is stupid simple:

  • Soy sauce — 2 tbsp
  • Sesame oil — 1 tsp (that's it, it's loud)
  • Rice vinegar — 1 tsp
  • Green onion + toasted sesame seeds
  • A little sriracha mayo if you want it creamy

Toss it and let it sit 10 minutes. Not an hour. The soy will start curing the fish and turn it chalky. Ten minutes. Set a timer.

Toppings: Texture Beats Quantity

The mistake I see most with a homemade salmon poke bowl recipe is too much soft stuff. Avocado, mango, cucumber, seaweed salad — all soft, all wet. You need crunch.
