How to Order Vegan Sushi Options That Actually Slap

We get this question at the counter probably ten times a day. Usually it's someone standing behind a friend who's already ordering a Spicy Philly Roll, and they lean over and go: "...is there anything here I can eat?"

Yes. A lot, actually. And no, it's not just a sad cucumber roll.

First, the thing nobody tells you about vegan sushi

Most sushi spots technically have vegan sushi options, but they're an afterthought. Avocado roll. Cucumber roll. Maybe some edamame if you're lucky. Fine, but boring.

The real trick is finding a place where you build it. Because when you control the base, the toppings and the sauce, vegan stops being a limitation and starts being a build. That's kind of the whole point of what we do — build-your-own means you're the one calling the shots, not us.

Watch out for these sneaky non-vegan ingredients

Even at a build-your-own place, some stuff hides. Quick cheat sheet from someone who's answered this a thousand times:

  • Spicy mayo and creamy sauces — almost always contain egg. Skip 'em.
  • Imitation krab — it's fish. Common mix-up.
  • Tempura batter — often has egg in it.
  • Miso soup — a lot of dashi broths are fish-based.
  • Eel sauce — sounds obvious, but people still ask.

Just ask your Ninja. Seriously, ask. We'd rather answer than have you guess wrong.

How to build a vegan bowl that isn't sad

Okay, my actual advice. Layering is everything.

Start with rice or spring mix (or half and half — do half and half). Load up on veggies, but pick ones with different textures. Something crunchy, something soft, something pickled. Then get avocado. Then get kimchi, because it brings the acid and the heat that most vegan bowls are missing.

Sauce is where people mess up. Go teriyaki or ponzu instead of anything creamy. Add sesame seeds and crispy onions on top for crunch. Boom — that's a bowl that actually eats like a meal, not a side dish.

Same logic works for a burrito, by the way. Vegan sushi burrito is criminally underrated and nobody's talking about it.
