How to Build a Spicy Sushi Burrito That Actually Slaps

We get this question at the counter almost every shift: "What do I put in it if I want it really spicy?" And nine times out of ten, the person asking is about to make the same mistake — dumping three hot sauces on top and calling it a day.
That's not spice. That's just wet.
A great spicy sushi burrito is layered. Heat should show up in three or four different places, in different forms, so the burrito doesn't peak in bite one and go flat by bite six. Here's how we actually think about it.
Rule #1: Pick a protein that can take the heat
Steak, chicken, and shrimp all hold up. They've got enough body to stand next to sauce without disappearing. Flame-torched steak is my personal pick — that little bit of char plus spice is a genuinely great combo.
If you're going raw, spicy tuna is the classic move. But raw fish is more delicate, so go a little lighter on the aggressive sauces or you'll bury it. Balance, ninja.
Rule #2: Crunch is not optional
This is the part people skip and then wonder why their burrito feels mushy. Spicy + creamy + soft rice with nothing to break it up is a texture nightmare halfway through.
- Crispy onions — cheap insurance, always works
- Tempura flakes — soaks up sauce and stays crispy longer than you'd think
- Cucumber — cold, snappy, cuts through the richness
- Flamin' Hot crunch — if you know, you know

Rule #3: Two sauces max — and make them do different jobs
One creamy, one sharp. That's the formula. Creamy sauce coats everything and carries flavor across the whole burrito. A sharper, hotter sauce gives you those spikes of heat that keep it interesting.
Three or more sauces and everything muddles together into one beige flavor. We've seen it happen. Don't do it.
