Build Your Own Sushi in Orlando: A Ninja's Guide
· By the Sus Hi Team
We've been doing the build your own sushi Orlando thing since August 29, 2011, back when we opened one little Dojo across the street from UCF and nobody really knew what a sushi burrito was. Fourteen years later we've got six Dojos around Orlando and one in Tampa near USF — and people still walk in, stare at the line, and go "wait, I can put anything in this?"
Yes. That's the whole point.
Pick Your Dojo First, Then Panic About Toppings
Orlando's spread out and traffic is traffic, so here's the quick breakdown of where we are:
- UCF Dojo — the OG. If you're on campus or anywhere near Alafaya, this is home base. Select Dojos stay open until 2AM and college kids know exactly which ones.
- Millenia Dojo — right off Millennia Blvd, so it's the move after you've walked the mall and need actual food.
- Lake Nona Dojo — Medical City crowd, we see you on lunch break.
- Colonial Dojo (50D) — East Colonial Dr, easy grab if you're heading downtown-ish.
- Chickasaw Dojo — off Chickasaw Trail, our east side neighborhood spot.
- Altamonte Springs Dojo — for everybody up north who doesn't want to drive to UCF.
How to Actually Build One (Without Standing There for Ten Minutes)
Step one: pick your vessel
Bowl, burrito, chilled noodle bowl, poke bowl, or roll. Bowls are our #1 seller and honestly that surprised us in the beginning — we thought rolls would carry the whole thing. Nope. Bowls and burritos took over immediately.
Step two: base and protein
This is where you commit. Raw, cooked, torched, veggie — it's your build. We flame-torch proteins on the line, which is the part people pull their phones out for.
Step three: don't over-sauce (or do, we're not your mom)
House sauces are where a build goes from fine to "okay this is my order now, forever." My personal take: two sauces max. Three if you know what you're doing.
If You Freeze Up, Just Order One of Ours
No shame in it. Some days you don't want to make decisions — you want somebody else to have already made them.
The Party in My Mouth Bowl is genuinely underrated and I'll argue about it. The Boom Boom Shrimp Bowl never misses. And if you haven't had a Steak Mac & Cheese Crunch Burrito yet — mac and cheese, inside a sushi burrito — what are you even doing with your life? That category doesn't exist anywhere else and we're weirdly proud of it.
Vegan? Hi-Ya! Waska Bowl, Livin' on the Veg roll, Edamame Dumplings. We got you.
Why We're Still the Spot for Build Your Own Sushi in Orlando
Robert grew up in his parents' Chinese buffet starting at age 8. Teresa started at her family's Saigon Market at 5. They spent three years testing this concept at family sushi parties before we ever opened a door. That's not a marketing line, that's just what happened.
And it still shows up in the food.
Order ahead online or through our rewards app (iOS and Android) and skip the line entirely — most of our orders come in digitally now anyway. Or walk into whichever Orlando Dojo is closest, tell the Ninja behind the counter you want to build something ridiculous, and see what happens.
See you at the Dojo. #SusHi #BuildYourOwn #OrlandoFood
